Alcoholic Cocktails

Cointreau Rickey – cool, refreshing, light, and simple to make, this drink matches the sweet and orangey taste of triple sec with the bitterness of lime. Mix triple sec (Cointreau for the preferred triple sec) and one ounce of freshly squeezed lime juice in four ounces of crisp carbonated club soda atop ice. Garnish with a lime and/or orange peel for the finishing touch on this refreshing mixed summer drink.

Pimm’s Punch – made to be served in a pitcher, this summer delight packs a punch of refreshing sips to your kisser. A cup of gin, about six cups of club soda, and half a bottle of Pimm’s No.1 (a gin-based liqueur). Mix in with a cup or two of the following fresh fruit (lemons, strawberries, blackberries, or any fruit you’d like to add), a whole cucumber peeled and sliced thin, and one bunch of mint (which is equivalent to two cups). And Voilà! You just made a simple cocktail that’s great for any summer party.

Cucumber Mint Gimlet – okay so this might be the favorite on the list … why? One word … cucumber. Cucumber is so refreshing, but with mint too? This HAS to be one of the most refreshing drinks at any summer gathering. Simple, and quick, add an ounce of simple syrup to muddle the cucumber and mint, an ounce of lime juice, and for the kicker, mix the concoction with two ounces of either gin or vodka. Who knows, you might enjoy one liquor over the other. Experiment. All we know is that this is one tasty drink. 

‘Faux’jito – love the taste of a mojito but want a healthier way to enjoy it? We’ve got you. This ‘faux’ jito combines all the regular ingredients (three pieces of mint, a wedge of lime, an ounce of white rum) but with a diet lemon-lime soda. Choose any of your favorites. Sugar the rim and you’ll enjoy this crème de la crème of delightful mojitos.

Blackberry Whiskey Lemonade – not much of a gin or vodka drinker? Well, throw some whiskey into the mix with this spiked lemonade. Combine a third of a cup of blackberry simple syrup, a cup of whiskey, lemon juice, some tonic or sparkling wine and a rosemary sprig to garnish and there you have it. A simple, quick whiskey style cocktail to sip during those summer days.

Non-alcoholic Mocktails

Watermelon Picnic Punch – this fun, simple drink can be served inside the watermelon! Grab some seedless mini watermelons and cut in half. Scrape the halved watermelon until hallow and add the pieces to a blender. Blend a couple cups of ice, frozen strawberries, lemon juice, and a third of a cup of sugar with the watermelon. To top it off, pour some lemonade into a pitcher before adding the blended drink and BAM! You’ve got one tasty summer style drink.

Minty Arnold Palmer – a minty spin on the famous Florida Arnold Palmer lemonade tea. Boil about 1 quart of water before mixing it with a cup of sugar, half a cup of tea mix and a tbsp of muddled mint leaves. After about 15 minutes of steeping, stir in 2 quarts of cold water, 6 ounces of lemonade concentrate (room temperature), and serve over ice for a refreshing summertime tea.
